This research is focusing on applications of the infrared drying technology in the processing of two large food commodities of California, rice and onions. The goal is to improve the energy efficiency and the quality of the finished products as well as disinfest and reduce microbial counts in the dried products.

The research will determine the optimum design and operation parameters of the infrared drier for rice and onion drying, disinfestations of rice, and reducing microbial loads of rice and dried onion. It will also develop recommendations for the practical applications of infrared drying technology for farmers and processors. The ultimate goal of the research is to investigate and quantitatively demonstrate the advantages of infrared drying technology in improving energy efficiency, product quality, and safety.
